As a built-to-order salad kitchen with more than 50 fresh toppings, five salad bases, and a dozen house-made, gluten-free, dressings, our guests can fully customize their salads and wraps exactly how they want with no restrictions. There are many other salad concepts like ours out there, but when you walk into a Salata we want our guests to feel like they can do, be and create anything they want—because they can.

      About the Role

      We are looking for a creative and open-minded culinary person who will assist with recipe development. The overall role of the culinary person will be ensuring recipe compliance, food production, food cost, safety, shelf life, quality, and cleanliness requirements are met according to Salata standards. This position requires a love for food and a passion for supporting the development of Salata’s Commissary production development.

      Responsibilities

      • Actively involved in recipe development. Working with a team of production, QA, R&D, Finance and Administration to develop quality recipes.
      • Knowledge of making salad dressings, sauces, soups, salsas, dips, hummus, marinara, alfredo and falafel is preferred
      • Responsible for providing the highest quality food and service
      • Recipe Development – creates recipes that are special and will drive sales that are based on data gathered from different platforms or based on experience and personal creativity
      • Translate small recipes to scale for commissary manufacturing
      • Nutritional Analysis-Seek and identify clean label ingredients
      • Facilitate presentations around findings of recipe and product development
      • Provide clear direction, both written (email) and verbally (facilitating), in developing Standing Operating Procedures to management, development, and training
      • Oversee and monitor the Test Kitchen’s operations and performance
      • Perform monthly inventory, establish, and maintain adequate supplies for efficient operation of department
      • Manage finances of culinary operations including budget and inventory of active projects
      • Other duties and responsibilities as assigned by the Purchasing Manager or Director of Operations

      Competencies

      • Communication skills regarding needs for recipes, timelines, and test days
      • Knowledgeable of culinary techniques and methods
      • Ability to read, write and speak English – Spanish is a plus.
      • Ability to work efficiently while maintaining workflow and hygiene in the Culinary areas
      • Strong organizational skills and the ability to multi-task
      • Ability to gather and present data on test equipment
      • Business Acumen/Cost Analysis capabilities
      • Possess excellent people and communication skills
      • Possess a positive service-oriented attitude toward guests and employees
      • Mathematical skills needed to prepare moderately complex calculations for financial reporting


      Qualifications

      • 3-5 years previous culinary experience in a full-service hotel, restaurant or equivalent
      • Culinary experience; knowledge of recipe development
      • Experience with Combi Ovens like Rational and Unox
      • TX Food Handler Certification
      • Serv Safe Certification


      Physical Demands

      • Occasionally required to stand, walk, or sit.
      • Use hands to finger, handle, or feel objects, tools, or controls.
      • Reach with hands and arms.
      • Climb stairs, balance, stoop, kneel, crouch, or crawl.
      • Ability to reach, bend, walk, and stand for an extended amount of time.
      • The employee must occasionally lift or move up to 50 pounds.
      • Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.

      Supervisory Responsibility

      This position does not have supervisory responsibilities.

      Position Type/Expected Hours of Work

      This is a non-exempt position. Days and hours of work vary depending on production needs. This position regularly requires working extended hours, holidays, and weekends.

      Work Environment

      This job operates in a warehouse work environment setting. Occasionally be exposed to variable temperatures depending on the season. Daily environmental exposures to heat, cold, and water.
