- Base pay of $62,000-65,000 depending upon experience.
- Annual bonus of up to 6%.

- Supervise staff (lower management, food service cooks/bakers, clerks/cashiers, and dining facility attendants) involved in all phases of Food Service Operation.
- Responsible for the preparation of all meals served in a U.S. Army dining facility with emphasis on safe food handling and nutritional requirements. Originate menus compatible with standards and budget as well as taste and dietary needs in accordance with contract requirements.
- Understand all paperwork/forms as it applies to Army Regulation 30-22.
- Ensure Cash Collection forms (DD Form 1544) are filled for funds collected. Will be required to request cash collection forms as needed and be accountable for the distribution and safekeeping of forms requested.
- Responsible for hand receipting all equipment used in facility, while maintaining accountability and condition. Record and maintain work order log.
- Monitor food service activities to ensure that the food produced is professionally served. Control purchase of food and supplies in compliance with Army Regulation and company policies and procedures.
- Review daily staffing pattern to ensure effective production. May be required to adjust staffing as needed.
- Inspect food service equipment and coordinate effective cleanliness and sanitation throughout the Food Service Department. Fully understand the operation of all large-scale kitchen equipment, including dishwashing machines.
- Ensure that the Hazard Analysis Critical Control Program, menus, schedules and all company guidelines and policies are adhered to.
- Attend all meetings and training as requested by the food director and top management.
- Hold weekly management meetings with subordinate facility management and bi-weekly meetings with facility staff.
- May be required to serve on various employee committees, as required and assigned.
- High school diploma or GED and some specialized training in high volume feeding supervision.
- Minimum of five (5) years of prior experience working food services required, management or supervisory experience preferred.
- Food Service Sanitation Certificate showing completion of study through Education Testing Service (ETS) or the National Restaurant Association or a formal course offered by a regionally accredited (Council of Higher Education Accreditation) trade school, college, or university.
- Considerable knowledge of the principles and practices of modern nutrition and food preparation, quantity cooking, buying, menu planning and food costs.
- Requires intermediate knowledge of Microsoft Office applications and PC functions.
- Ability to plan, schedule and supervise the work of a large staff.
- Ability to read, analyze and interpret professional documents, military technical procedures, and governmental regulations.
- Knowledge and use of mathematical equations and functions.
- Ability to write reports and routine correspondence.
- Ability to work in a fast-paced environment, including independently and on a team.
- Ability to present information and respond to questions from higher management, customers, and military personnel.
- Ability to work within approved budget and develop and implement cost saving measures; contribute to profits and revenue and conserve organizational resources.
- Ability to develop strategies to achieve company goals and adapt the strategies to changing conditions.
- Ability to display willingness to make decisions; exhibit sound and accurate judgment and support and explain reasoning for decisions made.
- Ability to adapt to changes in the work environment and manage competing demands. Ability to deal with frequent delays, change, or unexpected events.
- Ability to pass criminal, credit, drug, and driving screening.
- Possess valid driver’s license and maintain good driving record.
- Ability to climb, bend, squat, push, lift and carry objects ranging from 60-100 pounds; prolong walking/standing up to 90%.
- Ability to work occasionally under conditions of high temperature.
- Ability to work any time or day of the week, including weekends and holidays.
- Obtain and maintain government common access card and pass all government required computer usage tests.
PCSI is looking for a Dining Facility Manager on our food service contract at Fort Cavazos! This is a full-service, high-volume dining facility team that cooks and serves food for soldiers and others on base. The Dining Facility Manager oversees all staff at the dining facility and the operations of the contract involving preparation of food, budget, menu planning, and equipment. This role provides leadership to a team of 70 food service employees in a fast-paced environment and communicates regularly with the government customer. A strong knowledge of food safety and supervisory background in a large-scale food service setting is ideal for this position.
This position is based on the north side of Fort Cavazos in Killeen, TX and typically works a Monday-Friday day shift, but may need to be available weekends and holidays as needed.
