Meat Cutter

Position Overview :

Meat cutters use an array of sharp knives and tools that they must keep sharp and clean, as well as strict guidelines for cleanliness as mandated by the company. They must track how long meat can be displayed before it must be thrown away, prepare, package and display meats, and help customers with large or special orders.

Roles and Responsibilities:

1. Cut beef, lamb, poultry or pork into primal cuts for further cutting, processing or packaging as per customer's specifications.

2. Weigh cuts of meat or known quantity of meat on a scale to determine if the scale is giving accurate readings;

3. Trim and/or remove skin, bruises and other blemishes from meat portions;

4. Estimate by eye or by feel the weights of meat cuts to ensure they meet the customer’s specifications;

5. Perform a “cutting test” that is used to monitor the quality of meat and the workers trimming skills.

6. Must be able to work holidays and overtime as required.

Skills and Qualifications:

1. Completion of high school or GED equivalent (preferred)

2. Skills and Knowledge Required for Duties:

Oral communication; Working with others; Decision making;

Critical thinking; Job task planning and organizing; Continuous learning.

3. Experience is an asset.

Physical Demands:

1. Handling heavy loads.

2. Repetitive tasks.

3. Physically demanding;

4. Manual dexterity.

5. Good hand/eye coordination.

6. Combination of sitting/standing/walking.

7. Standing for extended periods.

8. Bending/crouching/kneeling.

Work Conditions:

1. 40 hours per week (8 hours per day).

2. Attention to detail.

3. Noise, odors, cold (refrigeration).
