Job Description

- Assist with the management of the receival and evaluation of grapes at intake in accordance with quality parameters and specifications.
- Monitor and manage extraction rates and alcoholic and malolactic fermentation preventing spoilage or downgrades of wine quality while minimising product loss.
- Participate in the daily ferment tastings and the subsequent delivery of work orders.
- Assist with the monitoring and management of wine blending, additions, filtrations, bulk tanker and general cellar operations preventing spoilage or downgrades of wine quality while minimising product loss.
- Maintain relevant winemaking records and information within the AS400 bulk wine system minimising stock holding variances across each year.
- Assist with the management of bulk wine stock through effective ullage and routine wine analysis programs, preventing spoilage or downgrades of wine quality.
- Assist with ensuring all wine bottling and wine release date deadlines are met in line with the bottling program.
- The assembling of a weekly and monthly work plan to lead and delegate work instructions to the cellar and laboratory teams, ensuring all tasks are carried out safely and in accordance with specifications.
- Drive exceptional levels of winery hygiene and general housekeeping
- Contribute, through regular meetings to the constant evaluation, development and improvement of all procedures relating to wine production.
- Exposure to premium cool climate wine production is essential
- Experience working in a premium winemaking facility (minimum two vintages)
- Tertiary qualifications in Oenology, Winemaking or related science
- Excellent planning, organisation & supervision skills
- Wine production knowledge
- Working knowledge of winery systems.

About the role
We are now recruiting for an Assistant Winemaker to join the team based at Tintara Estate (McLaren Vale). The focus of this role will be assisting in the management and accountability of all winemaking operations on site, within the guidance and parameters set by group and senior winemakers.
