      Pullman joins its sister property later in the year, just next door, Novotel Auckland Airport. The Novotel is a 263-hotel room with a buzzing restaurant, Bistro Thirteen 50.

      We are now accepting applicants for a critical leadership position to oversee the pastry department, including all patisserie-related responsibilities, food costs, and budget control for the pastry department throughout pre-opening and during operations as Pullman Auckland Airport's Executive Pastry Chef.


      Job Description


      This position is responsible for assisting the Executive Chef / Executive Sous Chef with operations of the kitchen and responsible for supervising the Pastry Kitchen; ensuring that food standards, preparation, ordering, presentation and cooking techniques are carried out according to established recipes and standards.

      • Hands on supervision of the restaurant, kitchen / pastry kitchn and other relevant areas where pastry items are offered.
      • In the pastry kitchen and relevant pastry areas, strive continually for innovative, quality and value for money food which is presented and served in the most complementary way.
      • Lead the team by setting a positive example.
      • Assist Executive Chef with pastry / dessert menu preparation and ensuring adequate supplies are available for expected service.
      • Ensure the highest possible standard of hygiene is practiced and maintained by the entire Food & Beverage team to meet Health & Safety regulations and food preparation guidelines.

      Qualifications


      • Previous 5+ years experience in Executive Pastry Chef/Pastry Chef roles in hotels.
      • Experience of a 5-star luxury hotel atmosphere is highly advantageous
      • Demonstrate leadership experience
      • Computer literate with administrative skills.
      • A strong understanding of food cost and control.
      • Knowledge of food safety requirments.
      • Must have all-round experience in baking, pastry production, sugar and chocolate artwork i.e.
        • Fully capable of techniques and creation of showpieces and praline;
        • Experience with sugar paste, royal icing and piping;
        • Advanced experience in baking savoury and sweet dishes such as cakes, Artisan pastries, bread and pies;
        • Extensive cake decorating;
        • Strong understanding of production in pastry for banquets and A La Carte
